The Gratitude Challenge

I got something posted on my Facebook the other day. It was about The Gratitude Challenge. Here is the challenge: write 3 things that you're grateful for in 3 days, then tag 3 different persons everyday and challenge them to do the same thing. Maybe some of you have heard about it or even done it but I haven't, so I decided to do the challenge.

Day 1

1. I’m grateful for having Jesus in my life. He redeemed me and took all my pain away.
2. I’m grateful for my family, friends, church and all the relationships that God has put into my life.
3. I’m grateful for today because today is Sunday so I can go to church to thank God and worship Him.

Day 2
 
1. I’m grateful for every process, circumstance, condition, hardship that God has allowed me to endure. Those have made me the person I've become today.
2. I’m grateful for every ministry that God has entrusted me with.
3. I’m grateful for my job! That's very important haha.

Day 3
1. I’m grateful for the good health God has blessed me with.
2. I’m grateful for the love & joy of the Lord that gives me strength everyday.
3. I’m grateful for having such a wonderful mom! Superwoman in real life!

Make Ahead Chicken Quesadilla

I've been trying to eat healthy and cook my own meal but sometimes I get so busy with work and cooking can be so tiring. That's why I tried to make ahead my meal and reheat later, thou it's not the healthiest way.

My first attempt was making ahead chicken quesadilla.

For this meal I'm using:

Flour tortilla
Shredded roasted chicken
Red bell peppers
Yellow onions
Pork ham
Grated cheddar cheese

Before I can make the quesadilla, I have to make the roasted chicken first. So I bought some boneless chicken breast and marinated them with salt, black pepper, parsley, garlic and honey. Let them sit overnight in the fridge. The next day I put them in the oven and roasted them. Make sure your roasted chicken is not undercook.

After they cooled down, I shredded the roasted chicken with forks. Storing food is very important. I usually wraps them with aluminum foil and put them in an airtight container so they won't dry out when they sit too long in the fridge.



Now it's time to make the quesadilla!!! It was really exciting because I've never made one before. To prepare the filling, chop some red bell peppers and yellow onions then saute them. I used a non-stick pan to cook the tortilla and I decided not to use any oil. Spread the filling on half of the tortilla and cover it with some grated cheddar cheese. When the tortilla is cooked through, fold the other half of the tortilla.


Cut the chicken quesadilla in half then serve with sour cream and some tortilla chips. To reheat use the non-stick pan or put in the oven.
